Happy first day of Fall on day 2 of our 28 day challenge! Hope everyone ate some delicious and nutritious food today and felt their health improving as they savored every bite! I had a busy day of work and was glad to have leftovers for supper and a nearby Wendy’s for lunch!
When I got all of the leftovers out on the counter for supper, I almost could have served a banquet! Note to self, do NOT cook this week! I also have to get up early enough to pack my lunch tomorrow so all of this good food doesn’t go to waste!
Breakfast- Old fashioned oats with blueberries, banana, raisins, grape nuts and unsweetened vanilla almond milk, and herbal tea
Lunch- Side salad and baked potato from Wendy’s. Instead of salad dressing, I cut up a peach I had in my bag and put some on the salad and potato and then added some salad to the potato, too. Very good! I ditched the croutons (oil and milk in them) and asked them to leave the margarine and sour cream out of my bag.
Supper- Leftover salad, garlicky mashed potatoes, mushroom gravy, eat loaf, and steamed kale in veggie broth.
Dessert- Happy Herbivore chocolate muffin. I put them in the freezer to discourage myself from eating them. It did NOT work! I can’t bear to throw food away, and will not bake these again for a long time! I have to remind myself that chocolate is high in fat and is a processed food.
