Baked french fries rock on day 5 of the Fall 2014 28 day Engine 2 challenge! Enjoying the continued gorgeous weather and wondering how we could have forgotten how delicious baked fries are!

Sometimes we forget how some of the simplest foods can be the most delicious. Baked fries are one of these simple pleasures and so easy to prepare. I just sliced up some golden potatoes, sprinkled them with Mrs Dash Southwest chipotle seasoning and some Mesa Chipotle seasoning, and baked on a silicone mat on a cookie tray for 30 min at 450 degrees. They were soft on the inside and brown on the outside. I had some just as they were, some with mushroom gravy, and some with ketchup. They were so good that my husband and I ate a total of 5 potatoes between the 2 of us! So if you need something yummy and easy that reminds you of an old comfort food, this might be just the ticket and no guilt necessary!

Breakfast- Old fashioned oats with blueberries, raisins, and cherries with Uncle Sam cereal and almond milk

Snack- Shredded wheat and raisins

Lunch- Subway salad with red wine vinegar and 1 oz of cashews on top. This would have been much better if I hadn’t told them to put all of the veggies in it. The pickles and pickled veggies are not my favorite on a salad.

Snack- 1 pc of Ezekiel toast with peanut butter and applesauce with cinnamon

Supper- Leftover eat loaf with mushroom gravy, baked fries, and a whole bunch of steamed broccoli
