Grocery store lunch, tasty and easy on day 6 of the Engine 2 Fall 2014 28 day challenge!
I didn’t pack my lunch again today which seemed to be a theme for the week and I found a great option that was inexpensive, plantstrong and delicious at the grocery store. I was passing by our local Wegmans and was getting pretty hungry by mid afternoon and remembered they had great veggie sushi! I got 8 pieces with pickled ginger and wasabi and it really hit the spot. I got a banana to go with it and it really hit the spot! I read the ingredients on another sushi that looked interesting, sweet potato sushi, but it had too many ingredients to even bother reading and they included at least one type of oil. Another great option at the grocery store is the salad bar, but the sushi was easier and quicker for me today.
Breakfast- oats with 1/2 banana, blueberries and topped with Uncle Sam cereal and almond milk.
Snack- shredded wheat
Lunch- veggie sushi and a banana
Supper- Spinach salad, Whole wheat angel hair pasta with steamed kale and home made pasta sauce with nutritional yeast on top
Late night dessert- a Happy Herbivore chocolate muffin with my daughter
