The plant based nurse

Today was an idyllic day in our corner of Northeast PA! The weather was sunny, warm, and t-shirt perfect, we had another veritable plant based feast with our great friends in our Engine 2 challenge group, and the dishwasher even got fixed!

We had a total of 13 today at our Engine 2 meet up to share plant based, oil free, nutrient rich food, swap recipes, get to know one another, and just enjoy the beautiful day. It always amazes me that even though we don’t coordinate what we’re all making, we always have unique and delicious dishes on the table every time we meet.

It is great to be able to fill our plates and know that everything at the table is a food we all can agree is health promoting and will leave us feeling satisfied but not bloated or groggy. One of our newest members has even noticed that on the days she didn’t have time to plan and ended up eating foods not on a whole foods plant based diet, she felt less sharp, even “fuzzy.” When she eats well, she feels so much better, which is a common observation by members of our group and helps motivate us to find time to plan to have good food in the house and on the road!

Breakfast- Leftover kale with racy mango balsamic vinegar and topped with old fashioned oats with blueberries, and chopped dates, Uncle Sam cereal and unsweetened almond milk

Lunch- snacked on veggies as I cooked my dishes for our meet up and had a corn tortilla, too.

Supper- Some of everything on the table! We had roasted red potatoes with rosemary, cucumbers and onions in vinegar, WW pasta with winter squash, Haluski, stuffed mushrooms, beet burgers with broiled pineapple, spaghetti squash with pasta sauce, quinoa tabouleh, corn tortilla salad bowls, endothelium enhancing beet soup, spring mix with arugula, and veggie burgers! We also had apple crisp and yonanas and dessert bullet fruit treats!

  1. These photos tell the story! That table of beautiful food just exudes robust, life enhancing, joyful nutrition. The faces of our friends exude the same thing. I was sorry I missed it! But I just realized that I missed it because I went to an all day yoga retreat, something that I wouldn’t have had the drive, the energy or even the notion to do before I cleared out the life clogging calories in my diet and replaced them with nutrient rich, whole food, plant based, life enhancing food. Thanks Jean for this visual celebration. Keep the good stuff coming!
