Just reflecting on how freeing this lifestyle has been for my family and I now that we have made plant based eating a habit that feels almost as natural and easy as breathing. We have so many choices of delicious nutritious foods to eat, have no worries about gaining weight, and are reducing our risk for heart disease, stroke, high blood pressure, cancer, osteoporosis and so many other common illnesses. We can go to the fridge or cupboard and eat fairly freely of just about anything we have as long as I have done a good job of planning to have healthy groceries in the house. Grateful for freedom to eat freely of health promoting foods and enjoy them guilt free!

Breakfast- oatmeal with blueberries, banana, raisins, grape nuts and almond milk

Snack- banana

Lunch- Leftover brown jasmine rice and 3 bean chili with cilantro and salad with 3-2-1 dressing

Snack- apple

Supper- Veggie stir fry created by my husband with broccoli, bok choy, red bell pepper, baked tofu, carrots, green onions, lots of garlic and basil, with a curry peanut sauce. Decadent!
