Feeling a little under the weather today and I think it was a reminder to slow down and pace myself. I could hear my father in my ear saying, “Slow up!” He was a workaholic and was sorry in his later years that he didn’t take more time to slow down and enjoy himself. He taught us by example that if you’re going to do a job, then do it right and we all took it to heart. Sometimes, though, it can mean you don’t settle for less than your ideal which is impossible to maintain. So here’s to slowing down to enjoy the scenery and letting our bodies get the rest they deserve!
Here are some winter scenes on a day I was on a deserted dirt road and took a moment to stop and enjoy the snow covered trees!
My food today:
Breakfast: Blueberry banana oats with spinach and grape nuts with almond milk
Lunch: Steamed kale and leftover rice and beans
Snack: Engine 2 jalapeno cilantro hummus with a few 365 brand woven wheat crackers
Supper: Baked Tofu and veggie stir “fry” with Jasmine brown rice
