In celebration of my veggie garden finally being planted this week, I’m giving away a free bracelet from Veggie Republic, make that three bracelets–one here on my blog, one on Instagram@theplantbasednurse and one on my Facebook page.

We had a great chat last night on with Veggie Republic founder, Karen Komen. For every bracelet sold, Veggie Republic donates 5 lbs of fresh produce to people in need through food banks. The bracelet is a colorful reminder to eat more veggies, too!

  1. Beautiful Garden!!!! and what a lovely bracelet too. So many lovely veggies to pick from, but my go-tos are carrots, potatoes and red peppers. Sorry, too many lovelies to just pick one.

  2. I agree, so many wonderful choices! I do like the potato, its easy to prepare, cheap, nutritious, great as a base for say, taco potato, stews, potato pancakes, fries, waffle fries, comfort food style…mashed potato or casseroles. Of course, they taste best loaded with other amazing veggies!! I have a soup every day and love it!!!!

  3. Great garden! Difficult to pick but I’d have to say roasted beets.

  4. HI Jean, like Cathy said what a great idea! One of my favorites besides peppers and tomatoes is okra I use it in all my soups and in my stirfries I just love them 🙂 By the way I love your raise garden:-)

  5. We never grew up eating artichokes. My brother used to say “It may have choked Artie but it’s not going to choke me”. When I first started dating my wife (the oldest of 5 girls) I sat at the dinner table and watched them devour the artichoke and fight over who got the heart. they would always cut it up and share it. to this day when we eat out Italian “family style” we always order an artichoke.

  6. Jean I would love to share my story like most people I was on the SAD (Standard American Diet) and I became morbidly obese became a diabetic then I went to see a psychiatrist because I was depressed they started giving me different meds one of them had an adverse reaction with my diabetes and ended up with super insulin resistance my sugars ranged between 400 to 500 everyday for 10 years I have a lot of diabetes problems because of it.

In 2010 I had a minor heart attack and my cardiologist told me that I had blockages then in all of 2014 I started having angina attacks then around October 2014 there were getting regular everyday especially after meals around 1 December I was sitting on the foot of my bed started to have real bad one could not breathe pain ran threw my back and down my right arm but I managed to get it to stop with Nitro but I knew I was in trouble on December 3, 2014 I went to the church and asked a brethren to pray for me that evening I came across a movie called Forks Over Knives Streaming on Netflix and it changed my life I looked at my dad and said Wow!! “Even the medicine bottles they showed in the movie were the same ones we were taking” I went on and discovered the Engine 2 Diet I’ve been on this diet now for about 7 months

Since I’ve been 100% whole food plant-based diet now no meat no dairy and no oils my diabetes are now running at normal levels I have a lot more energy I’ve had to cut my insulin down from 300 units a day to 80 units a day and that’s just in the morning my angina attacks went away my blood pressure is down to normal in the top all that off I have lost over 50 pounds 🙂

My Dad, was a lot worse than I was in 2000 he had a heart attack and they did a triple bypass surgery and he started into renal failure in June 2014 his renal labs came in very bad his GFR was at 28 the doctor told him to go and have a shunt put in his arm for dialysis the cardiologist told him that he could not have it done because his heart was too weak. Then in September 2014 dad was hospitalized in his heart function dropped to 25% Wow That was bad. Since dad and I started on this 100% whole food plant-based diet all of our doctors are amazed dads renal labs had improved and his GFR went from 28 to 37 changed everything the renal Dr. was asking all kinds of questions I told him about Forks Over Knives and he went home and watched a movie.

Then his cardiologist was excited dads heart function jumped from 25% to 47% he said wow! You have lost a significant amount of weight your colors back and he also wanted to know about the diet they ran tests on Him all the fluid around his heart is gone is water retention gone I have to say it’s quite an improvement in 7 months 🙂 And to top it all off he lost 30 pounds also. 🙂

  7. Hi Jean, I am new over at Engine2extras. I joined the chat with Karen the other night too. I dont have a blog but I have been thinking of using Instagram & FB to try to promote PBWF way of living. Great idea to do a giveaway. If I win or don’t win I think I will pay it forward with my own giveaway. Maybe it will be the first step in opening some friends & family members eyes to this way of living. These bracelets are beautiful.

As for my veggie I pick broccoli but Kale is running a close second place.

Looking forward to getting to know you over at Engine2extras.

  8. Love Your garden!!!

My favorite vegetable would be roasted broccoli on the grill!!
